In building mode you can paint particular parts by clicking on them in paintbrush mode.
THere's complete styles-partial styles and paintbrush.

Aah. Maybe, but only for certain parts. Like, I don't want to run into a rainbow colored eyesore. Maybe just for the recoloring of eyes, feet, hands, detail, and graspers. The body, mouth, and limbs should be consistent to keep things looking slightly realistic.
