Is there a way to go back and finish cell stage? I must not have tried everything.... And is there anyway to edit how your creature looks after entering the space stage? After seeing a couple of youtube videos I think I want to make a charizard lol

Yep, it's the only way to do it.

but it only takes about 5 hours to make a new species from cell to space, right?

Less if you play your cards right. I can rush through from Cell to Space in about 3 hours.
